Regena is cooking some up this week, so I wanted to share again.

I have had a number of folks email me and asked a few questions.
What is 'chili meat' ?
Answer - stew meat cut in tiny pieces.
What is 'masa'? (flour)
Answer - it is a corn flour, for making corn
tortillas, tamales, Enchiladas, etc. look for in Mexican Food section
of your grocers.
Do you have to use Newmans spaghetti sauce?
Answer - No, for we cannot get Newsmans here in Prince George.
Can it be chili without 'beans'?
Answer - "You won't Believe it Chili"
Joe's "You Won't Believe it Chili"
1 tbsp. cayenne pepper (red)* (see below)
1 lb. chili meat
2 lbs. ground beef
1 med. onion (puree onions and garlic in blender)
3 cloves of garlic
1 large can of chopped green chilies - 71/2 oz. can
1 32oz. jar of Newmans spaghetti sauce
2 cups water
1 tbsp. cumin
1 tbsp oregano
1 tbsp paprika
1 tpsp garlic salt
1/2 cup masa
Mix meat, onions and garlic into a large pot. Cook all of it together
until it is all browned.
Add water, spaghetti sauce and other ingriedants (except the masa)
and stir every five minutes. Cook for thirty minutes, stirring as
prescribed.
Now start adding the masa, sprinkeling it in as you stir to keep it
from forming little balls.
Turn the heat down to simmer and cook it this way for abut one or two
hours.
Add masa to thicken or add water to thin, which ever suits your
taste.
* If you like it MILD cut the red pepper in half. If you like it
HOT, add more red pepper.
Just remember the little kids when you add more red pepper. B-)`*
DO NOT cut the green chilies, because they add lots of flavour and
very little heat to the chili.
PLEASE DO NOT, repeat DO NOT add any chili power to the chili.
Because it will mess it up, I know, because I did and it did foul it
up.
This formula will make enough chili to feed ten or twelve adults.
But if unexpected company shows up, just add some more masa and water
and say grace.
P.S. If you don't like it, remember, I said "You won't believe it"
